Viticulture:

Organic and biodynamic (not certified).

WineMaking:

100% whole cluster. Fermented over indigenous yeasts in stainless-steel tank. 2 punch-downs in total.

Aging:

Aged for 12 months in barrel (no new oak).

Bottling:

Neither fined nor filtered. No added sulfur.
