Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
De-stemmed and macerated for two weeks, followed by fermentation over indigenous yeasts.
Aging:
Aged for 18 months in older barrels.
Bottling:
Neither fined nor filtered.
