2 ha. planted in 1974. Terraced vineyard, extremally shallow topsoil of marl over limestone bedrock.
Viticulture:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
30% whole-cluster. Short cold pre-fermentation maceration. Then fermented over indigenous yeasts.
Aging:
Aged for 12 months on fine lees in barrels (20-30% new). Then blended and aged for 5 additional months in stainless steel tank.
Bottling:
No fining; minimal filtration.
