Château Canon Saint-Michel is a 4.5-hectare estate situated in the Canon-Fronsac appellation on Bordeaux’s Right Bank.Owned and farmed by Jean-Yves Millaire since 1998, the estate is certified organic and biodynamic (Biodyvin). The vineyard, located on the Tertre de Fronsac, features a mosaic of clay, sand, and limestone soils, including calcaire à astéries, contributing to the wine’s depth and minerality. Grapes are harvested by hand, vinified in concrete vats, and aged for one year in a combination of foudres and 300-liter barrels, followed by an additional year in concrete vats. This extended aging process allows the wine to achieve balance and stability with minimal sulfur usage. The blend typically consists of 70% Merlot, 10% Cabernet Sauvignon, 10% Cabernet Franc, and 10% Malbec, resulting in a harmonious wine with pure fruit expression and fine-grained tannins.
