Claire Race, the current winemaker at Domaine Denis Race, represents the fifth generation winemaker of this esteemed family-run estate in Chablis, which has roots in Chablis going back to the 18th century. The Domaine spans 18 hectares of vineyards, strategically located in some of the best sites in Chablis. These holdings include prestigious plots in Chablis Premier Cru and Chablis Grand Cru appellations.

The Domaine is committed to sustainable viticulture, employing practices that preserve the health of the soil and the environment. The domaine practices lutte raisonnée, a form of organic management that minimizes the use of chemicals and emphasizes natural solutions. This approach ensures that the vineyards remain healthy and productive, allowing the grapes to fully express the unique characteristics of their terroir. The vineyards are meticulously maintained, with careful attention to canopy management, soil health, and yield control to ensure the highest quality grapes.

In the winery, Claire Race employs a philosophy that respects the natural qualities of the grapes while utilizing modern techniques to enhance their expression. The winemaking process begins with a gentle pressing of the grapes to extract the purest juice. Fermentation is carried out in temperature-controlled stainless steel tanks to preserve the fresh, vibrant fruit flavors and the characteristic minerality of Chablis wines. Malolactic fermentation follows, softening the acidity and adding complexity to the wines.

Aging is carried out primarily in stainless steel tanks, with some cuvées seeing a period in oak barrels to add subtle nuances and structure. This careful balance of stainless steel and oak aging allows the wines to develop complexity while retaining their freshness and minerality. The result is a portfolio of wines that are elegant, precise, and true to the terroir of Chablis.
