Sèves

Smiling couple standing in a vineyard with bare grapevines and hills in the background

Sèves was born in winter 2023, when Marie and Foulques had the opportunity to work their first parcel in Bouzeron (Les Cordères, 0.63 ha). They continued gaining experience nearby, in the Maranges, at Domaine de Cassiopée. They vinified this first vintage while also supporting Claire Naudin (Marie) and Sylvain Pataille in Marsannay (Foulques).

Marie remained at Domaine de Cassiopée for another year before joining Le Puy de l’Ours in Savigny-les-Beaune, working in both the cellar and the vines since early 2025. Foulques works on behalf of Burgundy winegrowers within the Confédération des Appellations et des Vignerons de Bourgogne (CAVB). Alongside the gradual expansion of our vineyard area (+0.26 ares of Bourgogne Aligoté in 2026), we devote considerable energy to supporting organic winegrowing, advancing the economic, environmental and social sustainability of the sector, and championing Aligoté.

BOTTLING: without fining or filtration, and with a very small dose of sulphur before bottling.
