4 ha. with oldest vines planted in the 1910s and youngest planted in 1995. Several northeast and southeast-facing parcels on the left bank of Layon river, silt and gray schist soil.
Viticulture:
Organic (certified Ecocert) and biodynamic conversion (Biodyvin). Guyot-Poussard pruning.
WineMaking:
Directly pressed with whole cluster. Light musts racking. Alcoholic fermentation by yeast starter. Complete malolactic conversion.
Aging:
Aged for 8 months on lees in underground vats tiled with sandstone.
Bottling:
No fining but light filtration.
