Vineyard:
1.3 ha. with oldest vines planted in the 1950s and the youngest in the 1980s. Located in the village of Saint-Lambert-du-Lattay on the banks of the Hyrôme, a small tributary of the Layon. Briovarian sandstone schist soils, rich in quartz.
Viticulture:
Organic (certified Ecocert) and biodynamic conversion (Biodyvin). Guyot-Poussard pruning.
WineMaking:
80% de-stemmed. Maceration for 11 days and gentle infusion. Complete malolactic fermentation.
Aging:
Aged for 10 months in underground tile-lined tanks and terracotta amphora.
Bottling:
Light earth filtration.
