Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
Pressed with whole cluster and fermented over ambient yeasts.
Aging:
Aged for 15 months in barrels (0-10% new).
Bottling:
Fined with bentonite and filtered, only if necessary.
