Situated within the 9.13 ha. Premier Cru climat, Les Aigrots, this southeast-facing 0.23 ha. parcel was planted in 1988 over light-colored, limestone and marl soil, with topsoil rich in clay and silt covering a rocky, limestone subsoil.
Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
Pressed with whole cluster and fermented over ambient yeasts.
Aging:
Aged for 15 months in barrels (0-10% new).
Bottling:
Fined with bentonite and filtered, only if necessary.
