Viticulture:

WineMaking:
Pressed with whole cluster. Fermented over ambient yeasts. Coordination with the lunar calendar.
Aging:
Aged for 12 months on lees in older barrels (25% new oak). Blended in stainless-steel tank before bottling.
Bottling:
Fined.
