WineMaking:
Pressed with whole cluster. Then fermented over ambient yeasts.
Aging:
Aged for 11 months in used oak barrels and tank. “Zen” means that there is no sulfur added until bottling.
Bottling:
Cuvée “Zen”: 10-20 mg/L total sulfites.
