Viticulture:
Organic and biodynamic (not certified).
WineMaking:
1/3 de-stemmed and macerated on skin for 5 days in 50L crates. 2/3 directly pressed as whole clusters in basket press. Fermented over ambient yeasts. Complete malolactic conversion.
Aging:
Aged for 6 months in 350L older oak barrels.
Bottling:
Minimal SO2 added. Neither fined nor filtered.
