WineMaking:
55% de-stemmed. Cold maceration (13-14°C) for 4 to 5 days. Fermented over ambient yeasts in tank for 15 to 21 days.
Aging:
Aged for 12 months in oak barrels (10-15% new).
Bottling:
15-20 mg/L total SO2.
