Viticulture:
Organic (not certified). Farmed according to the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
20-25% whole cluster. Cold maceration and fermented over indigenous yeasts.
Aging:
Aged for 12 months in barrels (20-30% new). Then blended and aged for 4 additional months in stainless steel tank.
Bottling:
No fining, minimal filtration.
