Young vines from Volnay and Bourgogne classified vineyards that grow on clay and limestone.
Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter). Cover crop sown in winter and plowed in spring and summer.
WineMaking:
Hand-picked in small boxes of 30 kg to avoid crushing the grapes, then directly pressed for several hours. Fermented in barrels over indigenous yeasts, followed by malolactic fermentation.
Aging:
Aged for 18 months in used barrels.
Bottling:
Bottled exclusively in magnums without filtration or fining.
