Vineyard:

0.5 ha. planted in 1960 over red clay soil. 350/400m elevation. Density of 4000-5000 vines/ha.

Viticulture:

Biodynamic (certified Biodyvin). Yield 40-50 hl/ha. Double Guyot pruning.

WineMaking:

De-stemmed and transferred in concrete tank. Macerated for 20-30 days with small pump-overs, then directly on the skins. No temperature control. Spontaneous fermentation over native yeasts. Complete malolactic conversion.

Aging:

Aged for 12-15 months in concrete tank.

Bottling:

3 mg/L total sulfur.
