Vineyard:
On average 35-year-old vines. The vineyards of Verzenay are nestled between two small hills and have the particularity of many different exposures. The chardonnays are coming from Villers Marmery and the Meunier from Villedommange both Premiers Crus.
Viticulture:
Certified organic (AB) and biodynamic (Biodyvin).
WineMaking:
Fermented in small enameled vats and 30% in wooden barrels. 55% malolactic conversion.
Aging:
50% reserve wine.
Bottling:
No fining, no filtration. Dosage: 4 g/L. Disgorged every 2 months.
