WineMaking:
The grapes are directly pressed, and the juice settles overnight in a stainless-steel vat. The next day the clear juice descends, via a gravity system, into a stainless-steel tank for alcoholic fermentation over native yeasts. It then passes into neutral barrels (300L and 600L) for malolactic conversion and aging.
Aging:
Aged for 12 months in barrels, followed by 6-12 additional months in stainless-steel tanks.
Bottling:
Fined or filtered only if necessary.
