Cabernet Franc vines planted in 1997 and Pineau d’Aunis vines planted in 2009. Shallow clay-limestone soil over bedrock of tuffeau. Situated mid-slope in Puy-Notre-Dame, southwest of Saumur.
Viticulture:
Certified biodynamic (Demeter). Guyot-Poussard pruning. De-budding.
WineMaking:
Slow whole cluster pressing. Maceration for 2 weeks in stainless steel and fiberglass tanks. Then fermented over indigenous yeasts.
Aging:
Aged on lees for 7 months in stainless steel tank.
Bottling:
Neither fined nor filtered. 5 g/L residual sugar. 30 mg/L total SO2.
