Vineyard:

3.5 ha. with oldest vines planted in the 1930s and the youngest in the 1990s. Multiple parcels in Saint-Lambert-du-Lattay on the left bank of the Layon river. Very stony sandstone schists soils, and a cool misty microclimate provide ideal conditions for botrytis development.

Viticulture:

Organic (certified Ecocert) and biodynamic conversion (Biodyvin). Guyot-Poussard pruning.

WineMaking:

Directly pressed with whole cluster and light racking. Fermentation using an indigenous yeasts starter in vat.

Aging:

Aged for 12 months in vat.

Bottling:

Neither fined nor filtered.
