WineMaking:
The must in cold clarified before being run off into barrels for the first fermentation. No malolactic conversion. The wine is left undisturbed on lees for 7 months before being bottled. The final blend is predominantly Pinot Noir from the very best years only.
Aging:
Bottle-aged on lees for minimum 36-48 months before disgorging.
Bottling:
Dosage: 5 g/L. Disgorgement every quarter.
