Viticulture:
Certified biodynamic (Demeter). Cover-crops, organic matter and sheep grazing.
WineMaking:
Müller-thurgau is fermented on the skins for a few days then pressed. Riesling and Pinot Blanc are pressed whole cluster. And Kerner is de-stemmed. Basket press for Riesling. Pinot Blanc and Kerner are crushed by foot. Then grape varieties are fermented separately over ambient yeasts in small vessels.
Aging:
Aged separately for 10 months in used barrels and some in stainless steel tank. Blended before bottling.
Bottling:
Minimal S02 10 mg/L added before bottling. No fining, no filtration.
