100% de-stemmed. Not crushed. Fermented for 3 weeks over ambient yeasts with gentle punch-downs and pump-overs.
Aging:
Aged for 4 months in stainless-steel tanks.
Bottling:
Neither fined nor filtered. Light SO2 addition (less than 20 mg/L).
