About 1/3 of the parcel grows on an extremely steep slope of about 50%, which requires plowing by horse. On top of that, the vineyard was planted in the 1950s on crumbly pink granite soils, which is why these vines consistently produce smaller grapes.
Viticulture:
Certified organic AB and biodynamic by Demeter.
WineMaking:
About 15% whole cluster fermentation in concrete tank over ambient yeast for just over a week leading to a gentle extraction.
Aging:
Aged for one year in used 228L and 350L barrels.
Bottling:
Neither fined nor filtered.
