Viticulture:
Organic (certified Ecocert). Gobelet training and double cordon de Royat pruning.
WineMaking:
100% whole cluster. Fermented over ambient yeasts for 2-4 weeks with semi-carbonic maceration in concrete tanks. 2 pump-overs per day.
Aging:
Aged for 8 months in concrete tanks. Complete malolactic conversion.
Bottling:
Neither fined nor filtered. Approx. 30 mg/L total SO2.
