WineMaking:
Pressed whole cluster. Fermentation over ambient yeasts and 10-month maceration in amphorae.
Aging:
Aged 12 months on the lees in foudres.
Bottling:
No filtration. No added SO2. Sweetness Level: 1.25 out of 4 – Tender
