WineMaking:
Long and gentle pressing with whole cluster. Ambient yeast fermentation. Malo may or may not occur, depending on the vintage.
Aging:
Aged for 20 months in used barrels.
Bottling:
Bottled by gravity with lunar coordination. No fining, no filtration.
