Vineyard:
Soil of alluvial sand, limestone and clay. From Vigna alla Madonnina planted in 2011 and from Vigna del Parco planted between 2008 and 2018.
Viticulture:
Certified organic. 5000 vines/ha. Guyot pruning.
WineMaking:
100% de-stemmed, then macerated for 3-4 days, followed by a light pressing in small vertical basket press. Fermented over ambient yeasts in stainless-steel tank, to produce the base wine, which is bottled with a small dose of must to initiate a secondary fermentation in bottle.
Aging:
After aging, the bottles are riddled and disgorged.
Bottling:
Neither fined nor filtered. Except for a tiny amount of SO2 in the pied de cuve, there are no added sulfites.
