Viticulture:
Certified biodynamic (Demeter). Guyot-Poussard pruning. De-budding.
WineMaking:
Whole cluster pressing. Only the first part of the press is used to make Blanc de Noir from Cabernet Franc. Then fermented over native yeasts.
Aging:
Aged on lees for 10 months in stainless steel tank and 15% aged in used wooden barrels of 4000 liters.
Bottling:
Neither fined nor filtered. Minimal sulphite add.
