WineMaking:
De-stemmed. Macerated in concrete tanks for 3 weeks then fermented over indigenous yeasts.
Aging:
Aged for 12 to 14 months in foudres, demi-muids and amphorae.
Bottling:
Minimal SO2 only added at bottling.
