WineMaking:
Pressed with whole cluster. Settled and racked. Then fermented over ambient yeasts in barrels (20% new oak).
Aging:
Aged for 12 months in used barrels. Then blended in tank for 4 months.
Bottling:
Fined with bentonite. No filtration.
