Viticulture:
Certified biodynamic (Biodyvin).
WineMaking:
Gentle pneumatic pressing. 12-24 hours settling of must in tank. Alcoholic fermentation on fine lees in barrels (20-50% new).
Aging:
Aged for 16 to 20 months in barrels.
Bottling:
Fined and filtered only if necessary. Bottled by gravity.
