Viticulture:
Organic (not certified).
WineMaking:
De-stemmed and macerated on the skins for 10 days. Then fermented over ambient yeasts for 3-4 weeks.
Aging:
Aged for 6 months in stainless-steel tank (70%) and in used 228L barrels (30%).
Bottling:
10-20 mg SO2 added before bottling.
