Viticulture
:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking
:
20-50% de-stemmed. Short cold pre-fermentation maceration. Then fermented over indigenous yeasts.
Aging
:
Aged for 12 months in barrels (30% new). Then blended and aged for 3 additional months in stainless steel tank.
Bottling
:
No fining; minimal filtration.
