0.27 ha. planted from 1952 and 1957. Soil with higher limestone content from the bedrock which resurfaces in some areas.
Viticulture:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
20-50% de-stemmed. Short cold pre-fermentation maceration. Then fermented over indigenous yeasts.
Aging:
Aged for 12 months in barrels (30% new). Then blended and aged for 3 additional months in stainless steel tank.
Bottling:
No fining; minimal filtration.
