Viticulture:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
50% de-stemmed and 50% whole-cluster. Short cold pre-fermentation maceration. Then fermented over indigenous yeasts.
Aging:
Aged for 12 months on fine lees in barrels (30% new). Then blended and aged for 5 additional months in stainless steel tank.
Bottling:
No fining; minimal filtration.
