Viticulture:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
80% whole cluster. Then fermented over indigenous yeasts.
Aging:
Aged for 12 months on fine lees in barrels. Then blended and aged for few additional months in stainless-steel tank.
Bottling:
No fining; minimal filtration.
