1.5 ha. planted in 1946, 1948, 1950s and 1980s. This old-vines blend is from 3 different lieux-dits: 50% Les Cognées, 25% Très Girard and 25% Les Chenevry. 3 different soils with deep clay, sand and gravel soils over clay-limestone bedrock form the Middle Jurassic.
Viticulture:
Organic (not certified). Coordination with the lunar calendar. Guyot and cordon training; high trellising.
WineMaking:
70% whole-cluster. Short cold pre-fermentation maceration. Then fermented over indigenous yeasts.
Aging:
Aged for 12 months in barrels (30% new). Then blended and aged for 4 additional months in stainless steel tank.
Bottling:
No fining; minimal filtration.
