Viticulture:
Organic (not certified) employing biodynamic principles. Debudding. Guyot Nantais pruning.
WineMaking:
Whole cluster pneumatic pressing. No débourbage (settling). Fermented over indigenous yeasts. Complete malolactic conversion.
Aging:
Aged for 12 months on lees in 450L barrels and concrete diamond vats. Then blended into glass-lined underground vats for 6 additional months.
Bottling:
Neither fined not filtered.
