Viticulture:
Organic and biodynamic methods (not certified).
WineMaking:
50-60% whole cluster. Cold maceration (13-14°C) for 4 to 5 days. Fermented over ambient yeasts. 15 to 21 days cuvaison.
Aging:
Aged for 15-18 months in oak barrels (40% new).
Bottling:
15-20 mg/L total SO2.
