From lieu-dit Les Fichots in Pernand-Vergelesses. Northeast-facing. Red soil over compacted bedrock of limestone and silex. Cool vineyard.
Viticulture:
Purchased grapes, organic and biodynamic (not certified). Plowed by horse. All the farming done by Catharina since 2022.
WineMaking:
50% whole cluster. Light maceration. Fermented over ambient yeast in stainless-steel tank.
Aging:
Aged for 12 months in used barrels.
Bottling:
Neither fined nor filtered.
