Viticulture:
Certified organic (AB) and biodynamic (Demeter). 9000 vines/ha.
WineMaking:
Pressed with whole cluster. Fermented over ambient yeasts.
Aging:
Aged for 11 months in barrels (8-10 years old oak). Then blended and aged for 6 additional months in tank.
Bottling:
Neither fined nor filtered.
