Certified organic (AB) and biodynamic (Demeter). 8500 vines/ha.
WineMaking:
Pressed with whole cluster and fermented over indigenous yeasts.
Aging:
Aged for 11 months, 80% in tank and 20% in 228L used oak barrels.
Bottling:
No fining. 50 mg/L total sulfites.
