Viticulture:
Certified organic (Eurofeuille). Yield 35 hl/ha.
WineMaking:
Directly pressed with whole bunches in a Coquard press. Fermented over indigenous yeasts in used oak barrels. Complete malolactic conversion.
Aging:
Aged in foudres for 36 months. 1 or 2 months before bottling, the wine is racked.
Bottling:
Neither fined nor filtered.
