Whole cluster fermentation for 2 weeks in concrete over indigenous yeasts. Punctuated punch-downs and pumping-overs.
Aging:
Aged for 16 to 18 months in neutral oak barrels (5-9 years old).
Bottling:
Neither fined nor filtered. Free SO2, less than 8 mg/l.
