2 ha. planted in the 1980s over clay-limestone soil. Eastern exposure, facing the Roche de Vergisson and surrounded by forest.
Viticulture:
Certified organic (AB) and biodynamic (Demeter). 8500 vines/ha.
WineMaking:
Pressed with whole cluster and fermented over ambient yeasts in ovoid tank.
Aging:
Aged in 19 hL cement ovoid tank for 12 months. Then racked and aged on lees, for additional months, in stainless-steel tank. “Zen” means that there is no sulfur added until bottling.
Bottling:
Unfiltered. Cuvée “Zen”: 10-20 mg/L total sulfites.
