Vineyard:
Carved out of the mountainside over the centuries and shaped by the construction of small terraces supported by stone walls, vineyards are perched on steep slopes overlooking the Adda River 420-550 meters below. On average 50 years old vines planted on shallow glacial-drift soil composed of 70% sand and 30% silt. Southern exposition.
Viticulture:
Organic (not certified). Guyot-Poussard pruning. Density of 3500 vines/ ha.
WineMaking:
De-stemmed grapes. Macerated for 3 weeks in stainless-steel tanks. Fermented for 8 days over ambient yeasts (pied de cuve style), with some pump-overs during the first few days). Followed by a period of about 10 days maceration. Complete malolactic conversion.
Aging:
Aged for 12 months in 20 hL untoasted French oak barrels.
Bottling:
Bottled in September in the second year following the harvest. Neither fined nor filtered. 52 mg/L total sulfur.
