Viticulture

Organic (certified AB). Guyot-Proussard. Permanent cover crop between rows. Density of 5500 vines/ha.
WineMaking
:
Whole cluster pressed and fermented over native yeasts. Malolactic conversion blocked.
Aging
:
Aged for 15-28 months on the lees in
demi-muids
and barrels (new and -12 years old). Blended and aged for an additional few months in steel tanks.

Filtered.
