Viticulture:
Organic (certified Ecocert) and biodynamic conversion (Biodyvin). Guyot-Poussard pruning.
WineMaking:
Directly pressed with whole cluster. Light racking. Fermentation over ambient yeasts. Complete malolactic conversion.
Aging:
Aged for 7 months in underground tank (40%), 400L oak barrels (40%) and amphoras (20%).
Bottling:
Light filtration.
