Harvested in passes to collect fruit that has naturally fallen (no shaking). Yield 10-20 tons/ha. Band press. Fermented at cool temperature over natural yeasts in used barrels and clay amphorae.
Aging:
Aging for 10 additional months in stainless steel tank.
