0.3 ha. planted in the 1980s over Quatenary alluvial soils in Bennwihr.
Viticulture:
Certified organic (Ecocert) and biodynamic (Demeter).
WineMaking:
100% whole cluster pressing for Riesling and Gewurztraminer. Partially de-stemmed for Pinot Gris. Macerated for 8 months in various amphorae (sandstone for Gewurztraminer and clay for Pinot Gris). Fermented over indigenous yeasts, then blended in clay amphora.
Aging:
Aged for 3 months in clay amphora.
Bottling:
No added sulfur. Unfiltered.
